Lime Truck proudly offers delectable vegan, vegetarian, and gluten-free menu items: accommodating all of the guests’ dietary preferences without skimping on flavor. The Founder, Danile Shemtob, has literally written the book on food truck operations, having just released his first MasterClass, “Food Truck Entrepreneurship: The Road to Success.”

Franchise History

12 years ago, our founder Daniel Shemtob started cooking in a small but mighty kitchen on wheels all over Orange County. That mobile kitchen would eventually get a fresh paint job and become known as none other than The Lime Truck. 

As one of the OGs taking taco trucks to new heights, it was almost immediately that the crew started to rack up some pretty exciting recognition. It's been a wild ride since then, but we still live by the same guiding principle; do it with passion, or not at all.
